Winter salad 🥗

Winter is not easy when it comes to eating healthy. Especially in colder climates. This is a salad for this time of the year and as every raw salad easy and quick.

Ingredients:

  • cucumber
  • red pepper
  • avocado
  • corn on a cob (raw or baked)
  • carrots
  • greens of choice (spinach, arugula, dandelion)
  • lemon
  • spices of choice (paprika, parsley, turmeric, curry, sage)
  • vegan basil pesto (optional)

Prep:

Spiralize the cucumber for more texture and put in a salad bowl. Add diced avo and red pepper. Slice off the kernels of the corn by running a sharp knife down the length of the cob and add to the salad bowl. Add cut greens, spices of choice and sprinkle with lemon. Mix everything with a tea-spoon of vegan pesto (there are many options in the bio stores for vegan pesto). Decorate with carrot sticks. I do not use salt but of course add it if you wish.

P.S. I usually have this salad with tortilla chips or homemade buckwheat pancakes.
