Gluten-free & vegan pancakes 🥞

Vegan, minimalistic, easy-peasy pancakes. No oil, no yeast, no salt

Ingredients:

  • 250 mg buckwheat flour
  • 1/2 tsp baking soda
  • 1/2 tbs lemon juice
  • water (adding it up until the desired consistency is achieved)
  • spices of choice (turmeric, curry, red pepper, cumin, garlic powder etc. or cinnamon for sweet ones)

Prep:

Use as much of the ingredients as you wish. No measurements required. The baking soda should be just a pinch or two. Everything else can be eyeballed. The batter can be more liquid or thicker depending on the preference. I prefer it more liquid as the pancakes become thinner and cook evenly. With the time you learn the consistency and can decide how you like them more.

Combine all dry ingredients in a bowl and start adding the water. Stir the batter and keep adding water until the desired thickness is achieved. Pour one ladle of the batter in an already hot non-stick pan. Wait until done on one side and flip the pancake.

Eat with humus, veggies and falafel or with anything else you find appealing.
