Raw Zucchini Dip

Moving towards raw we have to come up with minimalicious (minimal + delicious) recipes to include in our menu. Here is one that might be an interesting option and add some variety to your creations. It takes little time to do and is as always with minimal ingredients and free of animal products.


Base of the dip

  • 2-4 raw zucchini
  • 2 tsp. tahini
  • half an avocado
  • dill or parsley
  • onion powder (experiment with other spices to get the taste you like)
  • paprika
  • 1 clove garlic
  • lemon juice to taste
  • a pinch of salt (optional)

Possible additions:

  • a piece of cucumber diced in very small pieces
  • a piece of red pepper diced in very small pieces
  • few corn seeds from a raw or baked corn on a cob
  • a smidgen of cayenne pepper



In order to remove the bitterness from the zucchini peel the skin off and slice them in pieces. Put in a bowl and cover with warm salted water for an hour or two. When ready transfer in a food processor and add all other ingredients for the base of the dip (parsley, tahini, avocado, garlic, onion powder, paprika, a squeeze of lemon juice and a pinch of salt). Blend until a smooth and creamy consistency is reached. Taste and adjust with an extra amount of the spices till you reach the preferred flavor.

For crunchiness and color you can divide the dip into two separate bowls and create different varieties. To one of them add the diced cucumber, to the other the diced red pepper, corn and cayenne pepper.

Enjoy them with homemade crackers, chips or crispy sticks!
