Raw stuffed peppers

I 💚 this recipe because it is easy, fast, juicy, delicious, nutritious and so satisfying. No animal products, no cooking.


  • 1 red bell pepper
  • 1 avocado
  • a small piece of finely diced cucumber
  • green onion (or red onion)
  • fresh basil leaves
  • salt (or a celery stick)
  • freshly squeezed lemon juice




Mash the avocado in a bowl using a fork. Add the finely dices cucumber, onion, basil leaves and celery (or salt). Squeeze some lemon juice to taste. Stir well the creamy paste and fill in the two halves of the red bell pepper.

The creaminess of the filling combined with the sweet, juiciness of the red bell pepper is divine.
