This is a good recipe for those who miss the cheesiness when eating a vegan diet. It is very rich and heavy so I make it only during the weekend. Too much protein for a fruit lover. Having said that, it is an amazing option for a spread or a dip. And it is plant-based and raw.
For the pate
- 1 1/2 cups raw sunflower seeds (soaked in water for 6 hours)
- 1/2 cup raw nuts of choice (cashews, pine nuts, walnuts)
- juice of 1 lemon
- 1 cup water
- salt to taste
For added seasonings
- finely diced green onions (or red onion)
- fresh basil
- finely diced celery stick (optional)
- cayenne pepper
Add the sunflower seeds, nuts of choice, lemon juice, salt and water in a food processor and blend until the desired creamy texture is achieved. Transfer in bowl and add the onion, basil and other spices. Mix, taste and adjust with more spices if needed.
