Cucumber noodles with tahini dressing

When you are on a high raw food diet there are not that many recipes to share as many days you eat an abundance of fruit and a salad a day. It is an amazing feeling for a lot of reasons. Not being a slave in the kitchen is one but the most important ones are how incredible you feel: light, energetic, happy, full of love and awareness. I just L❣VE it.

This is a salad I did yesterday and it turned out so delicious I decided to post it in my blog. Nothing fancy, few simple ingredients but it is the taste that is most important. Here it is:



  • spiralized cucumber
  • a couple of radishes
  • green onion
  • celery sticks
  • red pepper
  • nori flakes (amazing substitute for salt in a salad)


  • 1,5-2 tbsp. tahini (unsalted whole grain sesame)
  • 1 tsp. honey (if vegan – a sweetener of choice)
  • 1-2 tbsp. lemon juice
  • salt/tamari (optional – I do not use it as celery and nori flakes is all I need)
  • water



Add all diced veggies to the cucumber noodles. Combine all ingredients for the tahini dressing in a small bowl and stir well. In case the paste is too thick add some water and stir again. Pour over the coodles and sprinkle with the nori flakes.


The combination of sweet, sour, salty, spicy and fatty is too good. #yummy
