In order to be successful with anything you do you need an approach of passion and love. This is how I started seeing raw food – an endless opportunity for new creations, new taste, new feelings. A land of undiscovered good fortunes that if explored deeply will show you its hidden treasures. Cooking is easy: oils, cheeses and tons of spices to mask the lack of taste and vitality of the death food. The magic lies in finding the right combination of raw ingredients and create an explosion. If you have sensitive enough taste buds to appreciate it though… being on a highly raw or fully raw diet will definitely help you with that.
I am addicted to raw noodles and eat them almost, if not, every day. The trick is to make them smell and feel different so that you can enjoy the variety. You can spiralize veggies like zucchini, cucumbers, carrots, sweet potatoes, butternut squash. Play with it!
Today my recipe is with thickly peeled zucchini and a yummy tahini sauce. 1, 2, 3 …GO!
for the raw pasta
- fezucchini (2, 3 zucchini made into long, thick, “fetuccine-like” noodles using a veggie peeler)
for the sauce
- 1/2 to 1 zucchini
- 1 celery stick
- 1/4 of peeled lemon (remove the seeds)
- 2 tbs raw tahini (unsalted)
- 1 tsp honey (or 1 medjool date, or a sweetener of choice)
- a small piece of cucumber (for better blending instead of water)
- 1/3 red pepper (optional) *
- a piece of red onion (optional)*
- cayenne pepper (optional)*
* you can experiment with ingredients you have as long as you have the main ones right; try tomatoes, green onions, asparagus etc.
Use a veggie peeler and “peel” as many as possible noodles that will serve as raw pasta. Go from the top to the bottom of the zucchini as shown above. Turn the zucchini around as you go so that you can reach the seeded part evenly. Do not use the seeds. Keep them aside for the sauce. Place the pasta in a bowl or on a plate of choice.
In a blender add all ingredients for the sauce including the middle part of the zucchini used for the pasta. They will serve as a thickener and will make the sauce bulkier with more veggies and less fat. Blend well until the sauce is creamy and divine. Pour it over the raw noodles and decorate with your favorite veggies.
